What is Minestrone Soup?

Minestrone is a thick soup of Italian origin made with vegetables and pasta-based soup. It’s the kind of soup where you can add any vegetables and carbs of your choice. The core ingredients in minestrone are usually celery, onion, garlic, carrots, tomatoes, olive oil, pasta and it’s often topped with shredded Parmesan.     

              There is no set recipe for minestrone , since it may be typically made out of whatever vegetables are available to one. It tends to be veggie lovers , contain meat, or contain an animal bone based stock such as chicken stock.

METHODSaute and Boil


50 g Diced Carrot

75 g Diced Potato

50 g Dice Green beans

30 g Diced Cabbage

30 g Diced Cauliflower

30 g Diced Zucchini

50 gm Green Peas

1 medium Chopped Onion

3 cloves Chopped Garlic

150 g Chopped Tomatoes.

1/2 cup Tomato Puree

30 g Macaroni

50 g Grated Cheese

Salt and Black pepper (to taste)

1 tbsp Olive Oil

30 g Butter

500 ml Vegetables Stock

1/2 Tbsp Mixed Herbs (Basil & Rosemary)

1 Bunch Chopped Parsley

2 tbsp Fresh Cream

Cooking Method 

1st process :-

Boil the carrot, potato, cauliflower, green beans, and zucchini until 90% cooked and keep aside.

2nd process :-

Take a thick button sauce pan and heat it than add the olive oil than saute the chopped onion and garlic. Now, add salt and black pepper with mixed herbs.

3rd process :-

Time to add tomato puree and saute again. Add chopped blended tomatoes than saute until cooked ( Surface of the tomato should be red )

4th process :-

Now , add green peas and diced cabbage ‘Saute for 5-7 minutes’.

5th process :-

Add again boiled vegetables with blanch macaroni with the vegetable stock than leave it to boil for about 10 – 15 minutes.

Final process :-

Finally add the butter and mix again , Now Minestrone Soup is ready to serve hot on the bowl, garnish with fresh cream, parsley and grated parmesan cheese.

Side dish of garlic bread or bread basket.
